Quick & Easy - Pumpkin Butter

          Oh Autumn, It really is the best season! Finally its cold enough and the bees have run away, now I can spend more time outside playing fetch with our 9 month old/100 pound puppy. This Fall I have spent most of my time either outside enjoying the cool weather, or in the kitchen cooking up a storm.... and making a hurricane of dishes to go alone with it. This year I really wanted to focus on seasonal cooking, with the release of my first cookbook on the way spending quality time with the kitchen has been essential, and somewhat relaxing! 

 

          Lets get back to the point... Pumpkin butter, its delicious! you can use it for so many different things like Autumn spice parfaits, Ice-cream topper, a sweet addition to some Oatmeal and soooooo much more! Its simple to put together and makes a great addition to some of your favourite Fall inspired recipes! 

 

          With just a few ingredients, you can turn your left over pumpkin puree into something delicious!

 

 

Whats your favourite way to use pumpkin butter?

 

 

 

Ingredients:

1 1/2 Cups. Pumpkin puree

2 Tbsps. Apple sauce + 1/4 Cup water

1/2 Tbsp. Lemon juice

1/2 Tsp. Vanilla (Optional)

1/4 Cup Maple syrup

1/4 cup. Coconut sugar

1 Tsp. Pumpkin pie spice

Pinch of salt

 

 

 

 

Directions:

- Add all the ingredients into a sauce pan on medium heat. 

 

- Whisk everything together until well combined, continue stirring until it comes to a low boil. 

 

- Let your mixture simmer for 15 to 20 minutes, stirring occasionally .

 

- Once most of the liquid has evaporated turn off the heat and let the pumpkin butter cool completely before transferring into a glass jar and storing in the refrigerator.
