Weekday Lunches - 3 Simple Israeli Couscous Salads

            Sometimes we all need a little inspiration on what to pack for those work/school lunches. Making a HUGE salad at the beginning of the week is always a winner but, by day three you’re pretty much guaranteed to already be pretty bored with your food! Rather than end up losing motivation half way through the week, why not just make three different salads and alternate from one day to the next?!

 

            For each of the salads below, just start with the base recipe (see below) then add in the remaining ingredients, depending on what kind of dressing you will be adding in!

 

            For the dressing, you already know the routine, mix everything together in a bowl until well combined, pour it over your salad and mix everything to perfection.

 

 

 

 

 

 

Israeli Couscous Salad base:

2 ½ Cups. Israeli Couscous, Cooked (approx. 1 Cup dried)

½ Red onion, Minced

3 Cloves of garlic, Minced

¾ Red Bell pepper, Diced

1 Small zucchini, Diced * optional

 

*** Separate evenly between three bowls - One for each special dressing and additional Ingredients!!

Option One:

 

Tex-Mex:

 

For the dressing:

¼ Pkg. Taco spice (We used Old El Paso)

½ Tbsp. Olive oil

½ Tbsp. Lime juice

2-3 Tbsps. Cold water

 

Ingredients:

¼ Cup. Frozen corn, thawed

¼ Cup. Black beans

Handful of Fresh Cilantro, torn

¼ Cup. Tomato, diced * Optional

Option Two:

 

Greek:

 

For the dressing:

2-3 Tbsps. Olive oil

1 Tbsp. Lemon juice

½ Tsp. Dried oregano *optional

Salt & pepper

 

 

Ingredients:

3 Artichoke Hearts, Chopped (Rise well if using canned)

¼ Cup. Sliced Black olives

4-5 Fresh Basil leaves, Torn

Option Three:

 

Curry:

 

For the dressing:

2-3 Tbsps. Olive oil

1 Tbsp. Lemon juice

1-2 Tsps. Curry powder

1 Tsp. Maple syrup (more if needed)

Salt & Pepper

 

Ingredients:

¼ Cup. Chickpeas

Grated carrots * optional
